Mediterranean stew and dumplings
Winter is well and truly on its way and there’s no better way to warm up than with a big bowl of stew and dumplings!
Stews can take quite a long time to prepare, but the good thing is that once all the vegetables have been washed, peeled and chopped, it all goes in one pan to slowly cook to allow the flavours to come through.
This tasty stew is full of healthy
goodness with a variety of vitamin-boosting vegetables to help keep out the winter chills.
I have also added some dumplings, infused with herbs, to the stew to make it even more substantial.
I think this dish will become a family favourite as I made enough stew to feed a small army and it all went in one go – with some having third and fourth helpings!!
Method
1. Preheat the oven to 100C/gas mark 3.
2. Heat the oil in a large saucepan or wok.
3. Cook the onion and garlic on a medium heat until
soft, but not browned.
4. Stir in the peppers, courgettes, cherry and chopped
tomatoes and the oregano.
5. Season with the black pepper and increase the heat
until the vegetables are simmering. Cook for ten
minutes, stirring every now and then.
6. Pour the stew into a deep ovenproof dish, cover

Ingredients

One yellow, one orange and one red pepper, deseeded and sliced Three courgettes, washed and chopped 250g cherry tomatoes Two 400g tins of chopped tomatoes

with a lid and cook slowly for two to three hours on
a low shelf, stirring occasionally.
7. Meanwhile, make the dumplings.
8. Put all the dry ingredients in a bowl and mix with the
cold water to form a dough.
9. Divide the dough into smaller balls and drop them
into the stew when the three hours are up. Sprinkle with the grated cheese. Leave the lid off the dish and increase the temperature to 200C/gas mark 6.
10. Cook the dumplings for around 20 minutes until they are light and fluffy and have doubled in size.
