Biscuits are one of the easiest and quickest treats to make. You can pack them with lots of healthy ingredients without taking away any of the taste. This week I have combined the chewy texture of a flapjack with fruit and oats to make a tasty little treat. These little biscuits are also easy for little ones to make. They will love having a go themselves and
will enjoy seeing and eating their own tasty masterpieces. I have also added a couple of tablespoons of coconut, though you can omit this if you like.
Just like flapjacks, you can use whatever dried fruit you like. You can also add chocolate chips as well – though as I have given up chocolate for Lent I missed them out!

Ingredients
Makes around 8-10 small biscuits 40g/one and half oz softened unsalted butter
40g/one and half oz caster sugar Two tbsp golden syrup
50g/one and three quarter oz porridge oats
30g/1oz self-raising flour
Two tbsp dessicated coconut Pinch of nutmeg
Method
1. Preheat the oven to 180C/356F/gas mark 4.
2. Line one to two baking trays with baking paper.
3. Beat together the butter, sugar and golden syrup until it
resembles a smooth paste.
4. Add the oats and mix together so they are properly combined. 5. Add the flour, coconut and nutmeg and mix thoroughly.
6. Stir in the raisins.
7. Make around eight to ten small balls from the mixture.
8. Place them on the trays, well spaced apart and flattened slightly. 9. Bake for 10 minutes until the edges of the cookies look golden. 10. Remove from the oven and leave to cool on the trays for
around 10 minutes, then transfer onto a wire rack to cool
completely.The cookies will firm up as they begin to cool. 11. Store in an airtight container.
