Marzipan tea loaf
It’s that time of year when most of us still have bits and pieces left over from Christmas.
I’ve still got bags of nuts, crackers, chocolate and other snacks to get through!
I also had a jar of mincemeat and a block of marzipan left over so decided to bake a rich tea loaf with almonds.
Marizipan and fruit are ideal companions and are often used in cakes – just think of rich fruit cakes with layers of marzipan.
Almonds also combine well as they are the prime ingredient in marzipan.
Marzipan can be something of an acquired taste, but I love the aromatic warming sugary taste.
It is often made into sweets such as chocolate-covered marzipan. It is also rolled into thin sheets and glazed for icing cakes such as birthday, wedding and Christmas cakes.
Marzipan can also be used as a cake ingredient, as in stollen.
Here I have chopped it into chucks and combined it with the leftover jar of mincemeat. Perfect for a filling fruity snack!

Ingredients Method
SUDUKO
200g/8oz self-raising flour
100g/4oz Cold unsalted butter,
cut into pieces
85g/3oz dark muscovado sugar 85g/3oz marzipan, cut into small cubes Two eggs
300g/10oz mincemeat
Two tbsp flaked almonds
Icing sugar
1. Preheat the oven to 180C/350F/gas mark 4.
2. Line a 1kg/2lb loaf tin with baking paper.
3. In a large bowl, put the flour and butter and rub together with
your fingertips until it resembles breadcrumbs.
4. Stir in the sugar and marzipan.
5. In another bowl, whisk the eggs and then stir in the mincemeat. 6. Add to the flour mixture, a little at a time, stirring after each
addition, until evenly combined.
7. Spoon into the prepared tin. Smooth the mixture down with the
back of a spoon and then sprinkle the almonds on top.
8. Bake for around one hour until a skewer inserted in the middle
comes out clean.
9. Lightly dust the loaf with icing sugar and leave in the tin to cool
for around 10 minutes before transferring to a wire rack to cool
completely.
10. Once cool, wrap in foil and store in an airtight container.
